Red beet(Beta vulgaris Linn.) is a vegetable rich in macronutrients, micronutrients and bioactive compounds, which is attracting interest because of its many benefits.
Recent studies show that the species stands out among other vegetables due to its high nitrate concentration. Even when compared to basil, lettuce, carrots, cabbage, parsley, Greek hay and even tomatoes, beet has significantly higher levels of this element, which in the body can be converted into nitric oxide.
Despite the natural occurrence of nitrate in the vegetables we eat, processes such as cooking can significantly degrade the substance (from 4.09% to 13.40%), which can compromise the recommended daily intake.1
