The versatility of Greek hay

Greek hay, also known as jellyfish, is a plant that originated and is cultivated mainly in India, Africa and the Mediterranean, to which aphrodisiac properties have been attributed.

A member of the genusTrigonella foenum graecum, translated from the ancient Greek "Three Angles", its name is due to the shape of its flowers. During its maturity, it forms pods which contain its seeds, which are mainly rich in steroidal saponins (such as diogenin), nicotinic acid, trigonelline alkaloid (an important precursor of vitamin B3), as well as phenolic compounds and flavonoids, which favor the body's various metabolic activities, which justifies the high demand for this plant.

The fresh or dried leaves and seeds of Greek hay are commonly used in cooking as a spice, being the main constituent of curry, or can be added directly to salads. In Egypt and Ethiopia, the seeds are used to flavor breads and cheeses. In ancient China it was used as a powerful tonic and in India, from ancient times to the present day, it has been used as a condiment.
