Reports from ancient times indicate that rice(Oryza sativa) first appeared in Asia around 3000 BC, more specifically in the province of Bengal, where several varieties were grown.

During the nomadic phase of mankind, rice grains were gathered for consumption in their places of cultivation. With the agrarian revolution, its seeds were established and spread all over the world, gaining prominence for the nutrients it offers. Today, it is considered one of the foods most consumed by the population.

It can be seen that rice has a long history, from the dawn of humanity to the present day, reiterating its importance in our daily lives. This relationship can be explained by its composition, which is rich in amino acids, functional lipids, vitamins (especially vitamin E), minerals, anthocyanins and phenolic compounds. Many of these compounds have antioxidant capacity, an important characteristic for balancing oxidative processes in the plant.
